I've baked cakes in all sorts of cans, but I line them with baking parchment and a little oil first. The towers for my castle cake in my photos were baked in coffee cans.

Forgot to mention that I fill the can approximately 2/3 full of whatever cake batter is to be used.

Cans are great for baking in order to do 3d cakes. I baked my Larry the Cucumber cake in two tomato cans. I just buttered them inside, and covered them in parchment paper, putting a circle on the base, and a collar all around.
cheers
