I have used the chocolate syrup frosting twice and it didn't crust enough to use the Viva method to smooth it. It tastes wonderful, though. If you need a crusting chocolate icing, I would just use a crusting chocolate buttercream.

No it doesn't crust. I've only used it once though, but it was very soft. Delicious, but soft. I don't know if adding more powdered sugar would help?

I use it and it does not crust; however, if you add more powder sugar (add a little at a time to you get it thicker) you can smooth it pretty good with a hot, wet icing spatula. See my cake with pink dots and stripes w/ candle coming out of the top. It held up really well even while I delivered it.

I have used this iicing though when it was humid out side and you could actually see on the side of the cake where the icing was starting to shift or slide down!! (Not good!!) icon_eek.gif

I was going to make a chocolate cake using this icing and then use pourable chocolate icing on top! Sounds yummmy and would also give a smooth, fondant - like finish............... I think. icon_confused.gificon_smile.gif

This icing is simply delicious; i tried it this weekend, but it does not crust - perhaps if you had a tablespoon of merinque powder for the crusting. . .

The Chocolate Decorator's Buttercream is delicious, and whoever submitted the recipe said they used the VIVA method. (I didn't try it.) I thought the choc syrup frosting was too soft, so used this one for a basketweave and it was great. Here's the link to the recipe:

when i made chocolate syrup frosting, it crusted just enough to Viva lightly, but i had to put it in the fridge first.
