Super Smooth Icing........

Ok, here's what my instructor taught us about getting icing super smooth. Either ice the cake with 1/4 inch thickness, being careful not to touch the spatula to the cake (to avoid crumbs). Or use the cake icer (smooth side) tip. Then, get a mixture of half powdered sugar and half cornstarch. Roll a fondant roller in the mixture and smooth over cake. Then get a Viva paper towel and use the roller over that. Trust me it works! Super smooth every time icon_smile.gif
