I used a recipe for the cake that we loved but we didn't like the icing at all.I want to make some cupcakes for tommorrow.Does anyone have a recipe for the red velvet? Or do you use buttercream? I thought it was a cream cheese icing?Thanks,Jamie

Traditionally you use a cream cheese icing. But who says you have to stick with tradition? It's just a chocolate cake with lots of red!

I use my base lcing with Lorann Cheesecake flavoring oil. This way I do not need to put in a fridge or worry about temp.

i use cream cheese icing & only cream cheese icing, with pecans unless i'm decorating it

I use the Crusting Cream Cheese icing from this website!!!

i did a red velvet cake for a client a few months ago and they wanted it tinted purple and to be buttercream and they raved about the taste!!!!!!!!! i really think it's whatever you/ your client want to taste!

I personally Like the cream cheese Icing with no nuts, but my customers LOVE my Grandmother's cooked icing recipe & it doesn't really have to be refrigerated! If I get a chance I will post it on here.

the recipe I have on here calls for a vanilla type flavor icing and I have been told it is out of this world good..... but the cream cheese frosting sound wonderful too.......

Thank you all icon_biggrin.gif I used the crusting cream and that was exactly what I was looking for. I think I will try it with nuts next time I just didn't have any.

Just an FYI - I think the person who posted about using Lorann oils was a good idea if you ever want to decorate with "cream cheese" icing. Real cream cheese icing is soooo yummy but so goopy - you can't even basketwave with it. So I'd suggest using a buttercream and flavoring it was the Lorann Cheesecake oil - it is sooooo good. I made a "cheesecake cake" a while back and used that icing and put crushed graham cracker crumbs on the side - yum!
