Do you use a dam of icing around each layer ?

You need to pipe a 'dam' of icing (medium consistency) around the edge of the cake and then fill the dam will your filling. Make the dam the same icing as what you are covering the sides of the cake with if possible. This way if some of the icing dam bulges out when you have filled the cake and put the other layer on top, it's easy to incorporate the 'extra' icing onto the sides of the cake.

After I put my icing dam in I fill it about 2/3 full of my filling. You don't want to overfill it because it will squish out above the dam.

When making the dam I use a decorator bag with a coupler in it. That is about how big around the dam should be.

I agree with everybody else on the dam. I also put a thin layer of icing on the cake, the dam then the filling. The layer of icing helps keep the filling from "soaking" into the cake. I've done it without the layer and I like the results with it better.
