Please Help!

Hi I am new at this cake decorating thing and I have a order for a cake using a 16 inch pan. Makine the cake is fine but the customer wants fruit on top of the cake here are my questions:

How many cake mixes will I need to fill two of these pans?

If I put fruit on top of the cake what is the stuff used to cover the fruit so that it does not go bad?

I want to use whipped cream icing so can I put that jelly stuff over the icing? Will it hold?

I am so nervous...do you have any other suggestions on how to do this cake?

I think I can only help you with one thing....

The stuff that goes over the fruit it nappage (technical fancy schmancy word for it) but you can use something like apricot preserves, thinned out with a bit of water and warmed up to spread easily. I dont think you can put it over the icing it would melt it since you have to warm it up to apply it.

You'll need 7 boxes for a 4" high 2 layer cake. So each layer will be 3 1/2 boxes. LOL

Make sure that 16" pan fits in your oven. I almost made the mistake of buying the pan before measuring the inside of my oven. The half-round is the answer!
