Need Advice....please?!?!

Hi,

I am making a 1st birthday Monkey themed cake and smash cake for this weekend. My problem is the party is on Sunday and my husband and I are going away for the day and night on Saturday to celebrate our 6th anniversary sans baby. icon_smile.gif

My customer knows this and still wants me to make a cake and deliver it on Friday or early Saturday morning before I leave.

My question is will the cake still be fresh? I've never delivered early. Especially by 1 1/2 days. I am frosting with BC and having MMF figures. Can the figures be refrigerated since they will be fondant? I was under the impression fondant cannot be refrigerated.

Help!!!! I love everyone's advice here and I know you can help. icon_smile.gif

It should be fine!

But I wouldn't refrigerate it, unless it has a perishable filling.

I think it should be fine too. I work nights and often have to have them ready the day before.
