try google "cave diving" and click "images" and you'll get a bunch of great pictures...maybe that will give you some inspiration

That is a tough idea... what about a sheet cake with this image or something like it transferred on it?

hmm.. tricky
you could do a cave w/ a bunch of stalactites on it- give it a dark blue gray color
have some lamp fish on there

Thanks everyone. I think we've (the girlfriend and I) have been able to put together everyone's suggestion and come up with something. I'll try to post a pic.
