I love using this method using the dense foam roller...but I have a dumb question...do you smooth the sides or top first. I'm working on 2 wedding cakes now, and when I smooth the sides even gently, the icing gets pushed up and forms a ridge at the top...and when I try to smooth the ridge, you can still see where I tried to get it smooth. I've even tried using a piece of parchment paper on the cake when I roll it with the roller. Can someone tell me how to get my buttercream icing smooth like it looks professional? Thanks so much for any help you can give me!!!
