I want to make a banana cake for my mom's B-day but not sure what kind of filling or frosting to use. Any suggestions would be appreciated. I am going to use one of the banana recipes from this site but if anyone has a really good one to share, please let me know. Thanks

I just made a banana cake and filled it with banana mousse. It was a big hit! It was covered in fondant but first iced in almond BC. HTH!

I like cream cheese icing on banana cake, they go really well together.

The banana mousse sounds yummy. Would you share the recipe? I have never worked with fondant and it scares me a bit but I might have to try it.

I just made a banana cake, I filled it with a mixture of vanilla pudding, whipped cream, banana chunks, and almonds. I iced it with cream cheese frosting. I have also done an almond buttercream, soooo yummy!

Marscapone icing works well - you could add in some orange zest

I am baking a banana cake using The Cake Bible's recipe as we speak, and looking through the oven door, it doesn't seem to be rising *cry*! It still has 20 minutes to go, so maybe there will be some kind of miracle in that time *pray*! I'm filling mine with banana pudding and decorating with vanilla buttercream, but that's what the customer has asked for!

Marscapone icing is basically the same as a cream cheese icing but you use marscapone cheese instead of the cream cheese or mix it together with cream - I love using it - works great with carrot cake and chocolate/cherry cake. It seems to compliment a variety of flavours. Hope this helps.

Hi, I did a banana cake last month and the filling I used was NUTELLA!! It was very very good! Although, check first for nut allergies and even better if the person is a chocoholic! HTH

The cake didn't rise very much afterall, so I ended up having to make 3 layers, and even then it was only 3ins high! It tasted teriffic though (from what I had of the trimmings)! I delivered the cake today and the customer was pleased - it's the Batman cake in my photos.

nefgaby: Nutella would be so yummy. My family loves chocolate so just might have to give it a try.

Leigh01: Can I find the marscapone cheese in the cheese section at grocery store or is it in another place?

I have a jar of Nutella in the pantry and if I hadn't eaten so much halloween candy I would go open it. Oh well there is always tomorrow!! icon_razz.gif

yes...there are a ton of threads about Dulce de Leche on the forum...basically, you boil condensed milk in the can (water has to cover the can) and boil it for 3 or 4 hours...it comes out caramel-like...delish.
Watch out: the can can explode if you don't keep it covered in water at all times and keep the lid on the pot.of water too....you can do it in a crockpot too...
