Stacking Cakes Question...

Hi fellow ccr's...
Me again with my nervous first stacked cake...

I will be stacking it at the location... so transporting four boxes, stacking and finishing on-site.

Has anyone ever frozen ready for stacking...that is... cake prepped with dowels and then put in the freezer until the day before, then moved to refrigerator until delivery time? This would save me last minute time to the whole event day as I am also going to the wedding and what with out-of-town guests and all...seems easier to have all that done but I am unsure of what effect freezing with the dowels in, would have on the cake...wondering if they would expand & split?

Editing to add...maybe plastic dowels would do the trick?

I would use plastic dowels just in case.
I would be more worried about wooden dowels sweating after the whole cake has thawed and giving u unexpected moisture.

otherwise I dont see why not

You can use those large straws used for bubble tea as dowels and yes you can freeze them, just defrost slowly, as you said go from freezer to fridge. You should have no porblems out of it!

Thank you... bubble tea? Would I get those at a cake decorating store?
