i just took all my cakes for a friday wedding out of the freezer. I forgot to do it last night. they need to be frosted and covered by this afternoon because my mom is bringing my 1 and 3 year olds back then. Is it okay to frost and cover them with fondant when they are still frozen. what will happen? I seem to remember somebody famous saying they always put fondant on a frozen cake to trap in the moisture.

I'm not sure about the fondant part, but I frost frozen cakes all the time. It will make your icing super stiff (like out of the fridge only more so), easier to smooth IMO thumbs_up.gif

I cover my fondant cakes while they are frozen and have always had excellent results.

i'm worried about the fondant sweating and if the cakes will be defrosted enough by 6 friday night. if i put the fondant on in a few hours, am i going to have stuctural problems? does frozen cake expand when it thaws enough to make my dowels too short, then when i finally stack them i end up crushing my fondant. arg why do i do cakes icon_confused.gif

in the Nicolas Lodge DVD I have, he recommends putting the cake into the freezer for 45 minutes after applying the crumb coat to firm it up before applying the fondant.

thanks for your help. they are crumb coated, i have to put a bit more frosting on because everybody takes off the fondant. then i think i'll put them in the freezer for a few minutes like you suggested and then cover them with fondant. i'll let you know how they turn out.
