Just a question. I think i know what it is but just want to be sure. What is lemon zest?

It's part of the lemon rind... you can buy a zester that will kind of peel/shred off the lemon rind for your recipes.. it's really yummy cooked into stuff!

so do i just scrape it like i would if i was grading cheese?

Yes,you can scrape it on a food grater,or you can peel it with a veggie peeler and chop it up.

You just want the outside part not the white part,which is very bitter.

Yes, but only the yellow part. Stop when you get to the pith, which is the white part..it's bitter. Just scrape and turn. icon_smile.gif

Thanks so much I am going to try this new recipe i found. it is lemon cake with lemon filling and lemon buttercream icing. i like lemon if you couldn't tell.
