I wanted to share this with everyone......have had several requests,
and wanted to be able to let everyone use it......here goes! Enjoy!
Cookie/Petit Four Icing
2# powdered sugar
1/2 cup light corn syrup
1/2 cup plus 2 tsp. water
1 1/2 tsp. vanilla
1/4 tsp. salt
Colors of your choice
Blend this all well with your mixer. When smooth, add 1/4 lb of confectionary coating( candy melts or summer coating, melted and cooled ).
Again, mix until well blended, always at low to med. low speed. If thinner icing is desired, blend in more water, a tablespoon at the time until desired consistency.
Pour generously over cake squares placed on a wire rack over waxed paper.

One of my best selling flavors so far this summer has been lemon flavored icing on golden butter vanilla cake.....the lemon is so good!
