Ij was asked to do a carrot cake wedding cake. THree square tiers. I have never made carrot cake and was wondering if this would be too heavy of a cake for stack construction. She wants the tiers to be 4" high, covered in buttercream and fondant ribbon around it. is carrot cake to heavy to do this.
Help? Advice please!
I use carrot cake in my tiered cakes all of the time, just have to use cardboard and dowels just like you would with any other cake. This is the recipe that I use and it always stands up very well, HTH:

I love carrot cake. I use the Better Homes New Cook Book recipe, using their carrot pineapple cake. It has coconut in it and is so moist. Very good for stacking. Thin cream cheese frosting filling... a little orange oil and/or Grand Marnier in the buttercream, to die for. <<<Cheryl
I forgot to add that I covered my cakes in fondant and would do it that way if I ever did it again. (Is that a run-on!?!) Anyway, cream cheese icing is soft and "slippery" (in a yummy way). So make sure you do a buttercream/cream cheese mix. If you fill AND ice in cream cheese and then cover in fondant you will lessen your chances of the whole thing sliding on to the floor ... and we DON'T want that!! The fondant will add a bit of sweeteness that carrot cake lacks ... but can also be easily peeled off if some doesn't want it. MMF is so cheep to make it is well worth the "insurance". Best wishes!
I have always frosted with buttercream, and filled it with cream cheese frosting. Works great. I know I only have downloaded two pictures, (so listen at your own risk), but the cake with fresh flowers is a carrot cake. I've stacked it too, bakes beautifully and I can easily handle the torted layers with my hands because it sticks together so well. PM me if you want the recipe. Good luck! <<<<<<<<Cheryl
