determine how much the cake is going to cost with decorations? For example, if one is doing a 4 tier fondant wedding cake and the going price for the slice is $4 and the cake feeds 200 people - okay the basic cost would be $800, but then the bride wants cascading gumpaste roses down the side of the cake, how then do you determine how much more the cake is going to be?

i charge $3 per medium sized gumpaste flower. so i would estimate how many flowers you would need and charge her that way. i know others charge more for GP flowers, like $4-5 each, so you may want to charge within that range.

I charge extra for royal icing flowers (up to $20 worth). I have seperate prices for small, medium & large flowers. I also do this with fondant/gumpaste flowers... depending on complexity of the flower and how many... that's all I charge for though. I don't charge extra for basketweave, cornelli lace, etc. I do however charge $10 for the use of the fountain (just for maintenance expenses)... my prices are cheap as they are ($1.75 a serving) so I don't feel like this really dampers anyone's plans on a cake icon_smile.gif
