I have tried all week to make petit fours. I've come up with a cake recipe that I like (doctored mix). I'm stubborn though, and do not want to freeze it. I NEVER freeze cakes.
I've tried making the poured fondant, melting fondant, ready made icing, candy melts, etc.
I've tried dipping, pouring, etc. and all seems to be difficult. My squares are 1.5 inches L x W x H. I like the dipping method best, but maybe my dipping forks are not a good quality or my cake squares are too large.
I like the taste of the candy melts the best. When I tried removing them from the cooling rack, the coating broke. Should I have added shortening or oil or butter? Should I place them on wax or parchment paper?
Please advise. I have an order in October and I was practicing for it, but an order for Saturday has come up and I'm getting near desperation. I've been reading and watching videos and asking questions. Please help me.

try kathy scotts molds i think you will like them they are expensive but do make, making petitefours much easier. You can find her on ebay. i think the name of her company is www.sweetexpress.net
Make sure to order early cause although she has a nice product sometimes shipping can be slow.

I've seen the molds, and not only are they expensive, it's 'cheating' to me. I will probably buy them when I know for myself that I can make a petit four!

Does anyone know why I couldn't get the apricot glaze to harden? I learned initially that if you soak it, it won't harden. So I tried a few more squares and just painted it, and that didn't work either.
