hiii everyone.i have a cake order where the customer asked me to make a lemon velvet cream cake with cream cheese frosting.she actually gave me the recipes she wanted me to use,and i told her that id do my best, however i noticed after that the cream cheese frosting calls for whipped cream also and i have actually never made this icing so i was just wondering if any of u have made a cream cheese frosting with whippped cream and if its stable enough to hold decorations?any feedback u have is greatly appreciated.
thnx!
Hi! I have made cream cheese frosting a few times but not with whipping cream. Is the cream already whipped when you mix it in or are you using it as the liquid ingredient. All I've got to say about cream cheese frosting is it's a pain in the a** to work with. You almost have to put no liquid in it in order for it to hold shape and if you do, then you have to add more powdered sugar then you lose the cream cheese flavor & have to add more cream cheese and so on. It tastes great but it's hard to decorate with. Here's a picture of the last cake I did with cream cheese frosting that I was NOT going to post in my pics cause I didn't think it turned out so good
The flowers are butter cream but the cake is frosted with the cream cheese. It was just too soft for me. But I would LOVE to know of a better way to work with that frosting because it tastes so good! (sorry I rambled)

I have been able to stabelize cream cheese frosting without sacrificing taste too badly. Basically, you need to add som sifted all purpose flour to it. I know, strange, but if you do this, it will hold deco.
The recipe I use also calls for whipping cream. I use the heavy stuff. My recipe is:
1 brick cream cheese
3 cups powdered sugar
2 tbsp meringue powder
1 cup all purpose flour
1 tbsp vanilla
1 cup heavy whipping cream
You may have to add more powdered sugar. Here it depends on the weather.
Cream your cream cheese, and then add the whipping cream, and beat the heck out of it. Slowly add your flour first, then the vanilla. Then add the powd sugar until you have the consistency you want. Then finally beat in the meringue powder.
Hope this helps! The cakes I made with it are in my gallery, the Georgia Bulldogs G...carrot cake with cream cheese frosting, and colorflow for the G.
and the Duck River (which isn't a great example, but you get the idea) Good luck!
thank you so much both of u!i guess im going to try the recipe u put up yoktom, but if for some reason it doesnt turn out[my whipping cream is not heavy]then i still have some hope seeing as how heathers cake is still great with the cream cheese frosting!lol,
lucky for me,the customer has never had cream cheese frosting either so if i mess up the taste somehow, she wont really have anything to compare it too!
[n heather ur cake is absolutely lovely!]
