Margarita Cake?

My DIL and I had an idea for a margarita cake.
How about a lime cake with lime curd filling and a frosting made with tequilla? icon_lol.gif
Think that would work?
Mostly wondering if you can make frosting with tequilla. Thanks!

I would say you could replace your water or flavoring (or both depending on how strong you want it) with tequila just keep it away from those kiddies!! Not that it would be enough to really affect anyone!

Don't know how much tequila you'd have to add to the frosting...

You could use tequila extract:

I don't see why you couldn't, I use real rum in my butter rum buttercream. Experiment and add small amounts until you get the flavor/consistency you're looking for.

And jello has a margarita jello out at the moment. It's a limited time flavor, but mmm, I'll bet it would be good mixed into the lemon cake batter. icon_wink.gif

Wow...I gotta look for that Jello!
It would definetly be a grown ups cake.
I am flabbergasted that there is such a thing as tequilla flavoring. Who woulda thought? icon_rolleyes.gif
We also played around with Pina Colada Cake, Kaluha Cake....the combos are endless!
I'll let you know if it's any good. Will probably make one around Christmas.

My local safeway has the margarita and pina colada flavored jellos over by the alcohol and drink mixers, not by the regular jello, fyi. No telling where your store might stash it.

I make sunshine squares with knox gelatin, light orange juice, lemon juice, boiling water, and a T or two of the margarita jello (since it's not sugar free) for a yummy yummy low cal snack. I can vouch for the flavor!

I make a recipe that uses a white (from scratch) cake and lime curd filling, but the frosting is a fluffy eggwhite-based frosting that I then press coconut into. Not tequila, but delicious all the same! I've found that the sweetness of the frosting balances out the tartness of the lime curd very nicely.

How about combining two ideas/recipes into one. I found this recipe last year, but didn't get a chance to try it. It sounds so good, and fits right in here:

Margarita Balls From Family Circle Holiday Cakes & Cookies 1999
The secret to these incredibly flavorful cookies is frozen margarita (or limeade) concentrate. Youre bound to be asked for the recipe, so why not attach it to the gift package? (Maybe next year youll be on the receiving end.)

Makes: 7 dozen    Pre: 30 Minutes Chill: 2 hours

1   pkg (12 ounces) vanilla wafers    1 ½   cups pretzels
1  pkg (16 oz.) confectioners sugar, sifted  ¾   cup frozen margarita or limeade
                concentrate, thawed
2   pkgs (3 oz. Each) cream cheese    1  tsp. Tequila, or to taste (optional)
1  tsp. Orange flavor liqueur, (optional)    Finely grated rind from 1 lime
1   shaker (2.25 oz) green decorator sugar  ½   cup granulated sugar

1.  Place half the vanilla wafers in food processor. Process to fine crumbs. Remove crumbs and reserve. Repeat with remaining wafers.

2.  Add pretzels to processor. Process to fine crumbs to make ¾ cup crumbs.

3.  Combine wafer crumbs, pretzel crumbs, confectioners sugar, margarita concentrate and cream cheese in a large bowl. Add tequila and liqueur, if desired; stir until blended. Divide mixture in half. Wrap each half tightly in plastic wrap; refrigerate 2 hours.

4.  Combine half the grated lime rind with the decorator sugar in small saucer. Combine remaining half of rind with granulated sugar in second small saucer.

5.  Remove plastic wrap from one half of dough. Tear off pieces of dough and shape into 1 inch balls. Roll each in green or white sugar. Work quickly, because dough dries rapidly. Repeat until all dough is used. Store in an airtight container in refrigerator up to 1 week.

My husband is known for his "to die for" Margarita Cheesecake! MMMMM, good! He uses Margarita mix (liquid concentrate form) for the flavoring, and a 1/2, 1/2 combo of graham cracker crumbs and crushed key lime cookies for the crust. People request it all the time.

Hey potatocakes... that cheesecake would fly well in my family this holiday!! Does he just pour margarita mix in his recipe instead of vanilla or whatever flavoring the recipe calls for? I have been in the mood all week to make cheesecake, I am glad I waited so I can try this!

I'll have to get the recipe from him. It's actually pretty easy. I know it's eggs, sugar, cream cheese and margarita mix. I think that's it, but I can't remember the measurements. Oh, and he swears by the El Paso Chile Co. margarita mix. It's the only one he'll use. Williams and Sonoma used to carry it, but they've switched to a different brand now and it's just not nearly as good. So we order the mix off the internet. Remind me next week to share the recipe if I forget. I'm usually only online Tuesdays, Thursdays and Fridays (same days I work --- hmmm, what a coincidence!) icon_smile.gif

Don't you worry... we won't let you forget! hahahaha! Thanks for the info on the mix... I like the ChiChi's stuff, but I'm not a big drinker, so who knows if it's really any good! haha!
