I need an idea for a chocolate pudding filling that doesn't need to be refrigerated. My friend actually wants chocolate pudding mixed with whipping cream as a filling....that combo does need to be refrigerated, right?

Yes, the pudding and whipping combo needs to be refrigerated.

How about a thick layer of nutella, that doesn't require refrigeration.....

I have done cakes with pudding as the filling and as long as the cake isn't going to be sitting out for days I have never had a problem with it. As for the whipped cream - you could mix the pudding with cool whip - I think..... I've never tried it. I have filled a cake with cool whip and it was eaten 2 days later and was fine. I have done this with cakes covered in BC and well as fondant.

Thank you both so much for the great ideas. How about if I used the chocolate-vanilla swirl pudding snacks? Would that give me a similar taste/texture?

the pudding snacks still need refrigeration after opening.......are you opposed to buy a prepackaged filling??? Some of those are fine not refrigerated! Or what about mixing choc. pudding into a meringue buttercream?


what about a chocolate bavarian cream?? i know ther is some of that out there that's shelf stable

That's a good idea, maybe I should check at one of the bakeries over here. As far as I know, none of them sell prepackaged fillings icon_cry.gif

yeah, I pretty much buy all my cake supplies online (thank you CakeCentral!), If worst comes to worst, I'll just clear out a shelf on my refrigerator, lucky my husband is the patient type icon_smile.gif

I don't know if this is shelf stable once it's opened ......I know a lot of these sleeve fillings are though. Except for the cream cheese ones.
