Why am I having so much trouble making a simple 2 layer cake?! How can I get my cake even?
I need quick fix tips on getting a 2 layer cake even. I already have the bottom cake, a layer of icing and the top cake assembled. It looks like an hourglass! Should I fill icing in to even it? HELP ME! This cake needs to be done in the morning! ![]()
this happen all the time. do a crusting icing thin all around, let it crust in fridge, then go back and fill in the hourglass, just the middle part and let it crust. then do a final layer of frosting...
yeah, i did! (that was the response for cutting off the cake's 'hump' BTW).
the pans you have must have a slight flare in them to help facilitate removing them from the pans or something. I have that problem with the ones I use at work. So before I even begin to frost them, I trim them so that the sides are perpendicular and also make sure that the top is flat also.
I also place the cakes bottom sides up because the bottom is usually flatter than the top of the cake.
But you have alreeady frosted your cakes.
So, here is what I would do; first, I would scrape off as much of the icing that you can (no need to take it all off though) just consider what you have left as your "crumb coat". now take a long serrated knife (at least as long as your cake is tall) and carefully carve away the cake that is flaring out soo that your sides are perpendicular and then frost again. That should take care of the problem.
Oh! Actually I havent got that far
Luckily the only icing on my cakes right now is the MIDDLE (what's inbetween the 2 layers of cake). There's no icing on the outside YET, so i guess that's a good thing, lol.
If your sides are whats uneven-you can take a serrated knife and carefully even it out- I go from top to bottom doing a couple of inches at a time, not try to run the knife around in a circle (hope you understand what I am saying)...if its the tops, I usually cut those off before putting them together. I learned after my very first cake to cool them off completely before cutting any part of it. Usually they go in the freezer for about 45 min to an hour first ...Good luck, dont panic........breathe.
