Convection Oven??

I am used to baking from home with my regular oven. I am now my church's caterer. They have a commercial convection oven, is there anything different to using one of these. I do not want to burn anything. icon_redface.gif

Hey momof4...
I am our church hostess and we also have convection ovens in both of our kitchens, I baked lasagna yesterday for a luncheon and it took just as long in the convection oven as in a regular oven. I know that really doesn't answer your question but I am finding out that it's not always quicker in a co.
I do know there were some posts earlier today about convection ovens and baking cakes you can find these in the forum.
What church in Raleigh? We lived in Goldsboro for 23 years until last May.
