Hi all
I need to make a cake in the next week for my phone guy.
Ive been using him for my cell phone needs for at least 7-8yrs and this week I got a new phone and we traded a price break for a cake.

Im thinking of making the white almond sour cream cake and maybe the pineapple filling or a basic chocolate ganache filling. That or a coconut cake with pineapple filling (going for the tropical pina colada idea)

I was going to do a basic buttercream smooth job (never done it before) but this cake is going to have to take at least a 1 hr drive to get to its destination.
This is south Florida so its in the mid 90s w/ high humidity outside.
It would be riding in the car- hopefully in a cooler if I can find one big enough

but I still think it will be too hot for butter cream
I don't have time to do fondant for this cake and the price break wasnt good enough to merit a fondant cake plus I dont think theyd like it.

anyhoo
any suggestions for this dilemma??
do you think my combination will work??

Yep, your recipe ideas sound great. As for the buttercream, I believe there are some recipes on this site that are made for higher temps. Anything with butter will melt faster than ones with shortening, I believe. And I know there are some all shortening icing recipes on this site.

I had an all buttercream delivery last week during the Deep South heatwave, the buttercream was half butter/half shortening. I started the car up about 10 minutes before I loaded the cake so the AC had time to get going. An hour and a half drive later and the cake held up beautifully. As long as you have air conditioning and are not serving the cake outside I think buttercream will be fine.
