Refrigirate A Fondant-Covered Cake????

Hi- how do I store a mousse filled cake that is covered with fondant? Room temperature? or can fondant cake be refreigerated??????
HELP!!! I tried to refrigerate a fondant covered cake once (that was with a mousse filling)---- and after i took it out it became sticky, too shiny, i was afraid how long it could be out without starting to lose it's shape... HELP!!

Fondant shouldn't be refrigerated.

Mousse can't be left out.

I wouldn't combine the two...

The one time I did not put a fondant covered cake with a filling in the fridge, I had a real disaster. I have done several since then and do not have a problem when I take them out. Good luck!

Put the cake in the refrigerator. You'll need to let it warm up for a while before you try to decorate it, tho. It will probably sweat some, you can very carefully blot off the excess moisture, if you don't want to wait for the moisture to evaporate. Works just fine and keeps the mousse fresh. FondX fondant can be refrigerated! You can get it at www.caljavaonline.com. I just tried it last week and loved it. The cakes didn't get gummy at all as they came to room temp. I used mousse-type fillings--I was so happy to be able to do that finally in a fondant cake.

I one refrigerated a MMF-covered cake too. It started to get a little sticky on the surface as it came to room temp, but it was fine after a while.

Hmm ... I have the same dilemma. I have a 4 layer cake stacked and filled with mousse, covered in buttercream crumb coat. But I wanted to cover it with fondant and put decorations on it tonight. Does it get sticky when put in the fridge?! Even if uncovered? Any solutions to this??

Won't the cake dry out if it is refrigerated? Does the fondant or icing protect the cake from drying?

The fondant/icing keeps the cake moist. You'd only need to worry about refrigeration drying out the cake if it was uniced.

(is uniced a word? un-iced? unfrosted? icon_smile.gif )

hi everyone! thank you for all the replies!!! i will try the different fondant. for now- I DID make a 3 tier wedding shower cake with mousse inside. it was all decorated and colored with fondant, went in the refrigerator and when it came out it did sweat some. I was lucky it wasn't too long before it was served cause I wasn't sure what will happen. I guess it was more a personal problem and fear as to what might happen to it- i myself didn't what was happening as i watched it going from matte to shiny and sticky. but if some of you do it- then i guess i can try it too...... live and learn!!!! thank you so much for all the replies!!!! icon_smile.gif

My cake instructor who has been doing this for 14 yeaars said that is is okay to refridgerate and freeze fondant but when you take it out you must leave it outside for at least a day to let the fondant dry out. It is really important not to touch the cake before it dries as your finger print will be left in it. Jen

SatinIce can be refrigerated also.
