I Never Make Enough Icing!!

Every time I make a cake, it seems that I don't make enough buttercream! I make one batch for a two layer 8 inch cake. I seems though that this isn't enough to just ice a basic cake, let alone decorate it.
Do you all seem to double a batch of buttercream to ice and decorate your cakes?? I always wonder if I'm putting two much on there and the cake ends up being so overwhelmed with icing!! I hate when you can see a little of the icing peeking through the edges!
I always make at least 1 1/2 to 2 batches of a regular BC recipe for my cakes (more for a sheet cake). I figure that I'd rather have enough the first time than having to stop, make more, then try to match colors I've already mixed, etc. I always seem to have leftover but you can use it on a quick batch of cupcakes or keep it for practice! Better to have more than not enough.
My Wilton instructor gave me this guideline:
Cupcakes
1 cup Crisco
1 lb Confers Sugar
¼ cup water, milk or light cream
1 tsp flavor
8 CAKE
1 lb Crisco
2 lbs Confers Sugar
½ cup water, milk or light cream
1-2 tsp flavor
11X 15 CAKES
2 lbs Crisco
4 lbs Confers Sugar
1 cup water, milk or light cream
2-3 tsp flavor
I always have enough.

Thanks so much....I'm so very new to this that I'm still trying different recipes and trying new things along with learning to decorate!!
I also double the recipe. I know when we made the first batch with the Wilton Course I, I was like, what???? Am I a frosting hog. it was AFTER this class that the instructor told us to double it for an 8" cake - nice timing...
Actually, since I'm still learning, I make like a triple recipe so I can have LOTS of leftover icing so I can experiment with things. That and I last time I made a fbct for the following week. My mixer can handle big batches and I'm all for making one big batch and getting the mess over with in one shot.
