I know some people torte their sheet cakes and some use 2 layers and some only one. Normally, I use 2 layers and that's what I had planned to do with my current order. The problem is that the cakes rose much higher than I thought they would (new recipe) and right now, stacked without filling, the two layers together are already 4 inches high! I think it looks funny, but DH says that's how a bakery his company orders from makes theirs. (And this cake is for his company.) What should I do? I don't really think it looks right that high, but one layer doesn't seem like enough. This 1/4 sheet cake has to feed up to 25 (max. number of people who will be present). Maybe I should just make them a little shorter since I get orders from them now and then and don't want them to think every cake will look like this. Opinions?
The taller the pieces the the smaller they will slice it. So if you are worrying about it being enough I'd go taller.
Another option is to torte the two layers but only use three layers of cake. Save the other layer for another use. Or you can trim both layers down a little if you want them to be slightly shorter, but not as short as a 1 layer cake.
