How Long Do You Beat Your Royal Icing

I know all recipes call for beating Royal Icing for 7-10 minutes, but mine seems thick enough after 3 or 4---does it make a difference if you beat it longer?

Definitely - I beat mine for 10 minutes. Must form stiff peaks. I beat it for less time once, brought it to class and my instructor knew right away that I didn't beat it long enough.

It often does seem thick enough after just a few minutes but if you don't beat it long enough it will not hold it's shape. There was a gal in my course 2 class that had done this, she would make the most beautiful flowers that would then sink into themselves after a few minutes. Definitely go the whole 10 minutes.

If you have a hand mixer you need to beat for 10 min. If you have a stand mixer 7-9 min is fine. You can tell if you under mix because the icing will not hold a stiff peak. Over beating results in too many air bubbles and when dry the flowers will break.

10 minutes. loses its shine the longer you beat it.

About 9 minutes. I know it seems & looks thick much sooner, but keep it going icon_smile.gif

I use a hand mixer and beat on a low speed for 8-10 minutes. I've never had trouble with my icing and I do a lot of cookies.

I'm sure glad I asked that question. Perhaps that's why my Royal Icing hasn't been perfect. Thank you all so much.

I have a kitchen aid stand mixer - For those who have suggested to beat the icing for 9-10 minutes, what speed do you beat your royal icing at?

beat it low with the paddle attachement. you don't want to whip air into it. HTH
