Either Domino Ps Stinks...

or I'm an idiot for not sifting icon_mad.gif

I had a post a couple of weeks ago about some grainy buttercream. We narrowed it down to the PS which was Domino.

So today, I finally get the gumption about myself to do some practice cakes and I go about making some MMF. Well it was just about perfect on the first try after adding the PS (which never happens to me!) an lo and behold....I see these pebbles in my MMF icon_sad.gif I mean PERFECT consistency except for these little balls of hard PS!!!!

Okay maybe I'm just an idiot for not sifting the PS and it's all my fault and has nothing to do with the sugar itself. But I just had to vent. I'm frustrated!!! I have this big bag of it, it seems to be the only brand I can buy in bulk!! Now what do I do? I tried to pick out the little balls but that will take all day. I tried putting it back in the microwave in hopes that some of the little balls would melt and I could just knead it again. I don't think that worked. Man, just when I was motivated tapedshut.gif

Sorry this is so long but I needed to vent...

yes it stinks; I no longer use it. I refuse to sift. i buy Rouse's store brand

I have always used Domino and have only had this problem once, but I normally sift. but, I don't use one of the worthless sifter, I just use a big strainer, the kind with metal mesh, and shake it over a big bowl or wax paper and it only takes a minute.

As far as your fondant, if you let it rest overnight, most of the balls go away. That same thing happened to me and I was so frustrated, I just covered it up and put it in the fridge. The next day, I kneaded it and just had a few small balls that I picked out and it was good to go.

I've never made fondant, but I use DS for buttercream and royal all the time and haven't had a problem. I do sift, in a sifter, but I think after reading about big strainers on here I want to try it. It sounds way easier and faster.

I use Domino's exclusively. I've only had this problem once; when I picked up the regular instead of the 6X or 10X version. I NEVER sift; that's WHY I like their sugar, but it has to be the 6X or 10X or it's just plain confectioners sugar. Also, sometimes when you get a lumpy bag it may be a little old. Not bad old, but it may have been sitting on the shelf a while.

I've tried every brand available in my area, and Domino's is the BEST!! I hope you'll give it another try.

Probably gonna think I am crazy but I always pick up the softest feeling bags of whatever brand of PS. Lately it hasn't been dominos either! icon_sad.gif I don't sift it either and have great results..sifting is just a big ole mess in my eyes icon_wink.gif
