Just thought since I love this recipe so much, and everyone I've made if for has as well ... thought I'd share it here. This is a scratch chocolate cake recipe. It's called Crazy Cake. Apparently it came about out of necessity. During war times, and any other poverty stricken era ... things like eggs and milk weren't readily available. So, this recipe is sans milk and eggs, and is probably the most amazingly moist, chocolately and delicious cake I've ever had.

Here goes!
3 cups all purpose flour
2 cups white sugar
1 tsp salt
2 tsp baking soda
1/2 cup unsweetened cocoa powder
3/4 cup canola oil
2 TBLSP white vinegar
2 tsp vanilla extract
2 cups cold water

You sift together all the dry ingredients then mix in the wet. It's really amazingly good. The directions actually tell you to just mix all the ingredients in the baking dish ... make wells in the dry, mix and no muss no fuss. I bake it in my 9x12 pyrex baking dish. 350 degrees for 30-40 minutes-ish. Depending on the weather, it's taken up to an hour before, still moist as ever.

We call this recipe Wacky Cake in my family, and it was all my mother ever used to make our birthday cakes from when we were growing up. I too continued the tradition for a long time. It makes great cupcakes too. It carves nicely and keeps well, its a very moist cake. Thanks for the trip down memory lane!

good idea for someone who has vegan customers (if you use vegan sugar, of course).
