For those who make IMBC or SMBC or whatever, and white cakes

What do you do with all the egg yolks???? do you make custard filling? thats all I can think of but I don't always want to do that. I don't make that many cakes to hang on to them and I know a couple of cookie recipes that use only yolks (one of my favorite rhubarb bars!) but I am trying to cut out sugar in my life too.

also what about the worry of samonella? I have a french mousse I love! but I quit making it because of the raw eggs.

you can mix them with whole eggs, mix a little and freeze them in ice cube trays, pop them out when frozen store in zip lock bags and use when you make your next omlet. (you can freeze just the yolks if you stir in a little salt).

Make batches of egg noodles. THey end up being very rich, since it's all yolk, but the noodles can be frozen. I used to make these all year long and give them as part of my christmas gift to friends and co-workers. many of them looked forward to it each year.

One Kitchen Aide Attachement, 8 egg yolks and some other ingredients and you've got Home Made icecream. Mmmm...Mmmm...Mmmm.

Well, I use powdered egg whites for my IMBC. No yolks involved and they're pasteurized so no worries about salmonella.

However, with white cake, I do have leftover yolks and mostly end up throwing them out. however, I've been known to use them for key lime pie. YUM!

I've bought them in the store quite a bit before but the last time I got them, it was from honeyville grain online.

This can is HUGE and will last quite a long time. $20 for a 2 lb can. I think it came out to being something like 160 eggs-worth or something, can't remember for sure though.
