Ok, new cake night, I baked a white/strawberry with strawberry icing, so far so good. I found a filling recipe here on CC and I'm not sure what I did wrong, but it looks LESS than appetizing, to say the least.

The filling was:
1c thick cream
1 egg white
1/3c granulated sugar
1/2c fresh mashed strawberries
1/2 tsp vanilla
-Beat cream until stiff
-Slowly add sugar, egg white;beat until stiff
-Mix in berries and vanilla

Seemed fairly simple, but it looks more like clotted cream (EWW!) than anything else. icon_cry.gif I made this for my neighbor's bday, but I'm about to just put a thin coat of icing in the middle and be done with it, unless one of you brilliant cakesters have any idea of how to save this filling!
TIA ladies!
