My cream cheese icing is everyone's favorite, but I am going to try and make my first cake covered in MMF this weekend! Can or should I use cream cheese under it or would something else work better?
Also, I have printed the recipe for the MMF, is there some changes I need to make to it before I start in?
Can I make this fondant earlier in the week and use it on Friday?
Maybe that's it for now! Thanks, Katie icon_biggrin.gif

I'm not sure about the Cream Cheese thing, but if I could say only one thing about the MMF----Don't use the whole 8 cups the recipe calls for. I only use about 6 cups for mine. (A little less if making chocolate MMF)! 8 Cups will make the MMF too hard thumbs_up.gif

I made a diabetic cake a couple of weeks ago and used cream cheese frosting then decorated with fondant accents (the vegetable basket in my photos). I have not worked with mmf, but want to share my experience, just in case...the cream cheese seemed to react with the fondant, causing it to melt. This, of course, was only made worse by the fact that the cream cheese frosting required refrigeration, which is not fondant friendly. By the time, they picked up the cake a few hours later, the veggies were bleeding and sliding off the cake, the slats for the basket were sliding and collapsing down the sides and everything was becoming a mess. I doubt that the cake made it to the time of presentation to the birthday 'boy'.

I hope you have better luck.

For the LV cake that I did (in my photos), I used the Crusting Cream Cheese Frosting from this website with MMF, it worked out just fine!!!
