How Early Can You Make Cookies?

The first weekend in November, my family and I are going to a church retreat. I'm supposed to bring a cake and cookies. I was planning to make the cake Thursday night before we leave, but it'll be crazy to try to do the cookies that same day. So, can I make the cookies (NFSC with glaze and royal icing) on Wednesday night? Will they still be good? Should I keep them loosely covered or an air tight container? Should I freeze them or refrigerate them, or is the counter ok? Any advice would be great!
I'm sorry I don't know, but I'd love to know the answer as well!
I made 12 dozen a week ahead of time. Baked them one day and put mmf on them then deocrated the next day or so and then put them in covered containers or bagged them. They were PERFECT as people said. Also I think the flavor gets better as they "age".
So, would it be ok to do them this week when I have a lot more time?
They should be fine, even if you make them the weekend ahead. I live in California, and I assume the weather conditions where you live will effect the cookies -but a week for the basic cookie and royal should be fine.
I have some in a cookie jar that I made almost three weeks ago and I am still munching them and they taste fine.
good to know...thanks...I was going to post this same very question today.
That's good to know. I have more timet his week to make them, so I think I'll make them tonight. I'm in north Texas, so it's probably a bit more humid than California, but around the same temp I'd guess. THanks for the reassurance that they'll be fine!
