Too Lazy To Search The Forums - Can I Freeze This?

I really don't have time right now to search or I would -

I have a 2 layer choc and vanilla cake, raspberry preserves filling and buttercream dream frosting with white choc rasp creamer in it. It is torted, stacked and iced. But I don't know if I want to use it for the party tomorrow or the party Monday.

Can I freeze this and then take out and decorate Monday for Monday night? This is a "Just Family" cake and can be whatever I want. So I could use it for the party tomorrow as well, just not sure yet.

What do you think?

I would say yes, especially if you have put a simple syrup on the cakes. Freezing is much better than refrigerating them. The refrig. air will dry them out. But, freezing should keep it that long anyway.

Yes, you can freeze it as long as you wrap it well with a good plastic wrap. Since you are only going to be freezing over the weekend I would put it in a box then wrap the box with plastic wrap. To keep your bc from sweating as it unthaws have a small fan blowing on it until it comes to room temp. I did this as an experiment and it worked beautifully.

But can you freeze a cake covered in fondant and completely decorated? An acquaintance wants me to make a cake, but the event is at the end of Thanksgiving week, and I'm not caking over the holiday. icon_smile.gif

So she suggested I make it a week in advance and freeze it. Now I just need to know if that'll work for a cake covered in MMF.

Anybody know?

the satin ice website says you can freeze cakes covered in their fondant. Depending on your decorations, they may droop from the moisture when it defrosts and condensation develops, but freezing just the fondant covered cake with no decor sounds like a thumbs up from Satin Ice.

I have frozen a fully frozen non decorated cake and it was fine. there was some moisture on it but it turned out fine. If you want to airbrush i would make sure to take it out early so it can defrost and dry.

Yes, you sure can. I did this experiment too and kept the decorated fondant cake in the freezer for over a month. I put the cake in a cake box, wrapped the cake box in plastic wrap then wrapped that in brown paper. Stuck it in the freezer and it came out beautifully and was still very moist.
