I have a few questions for some seasoned cake decorators. I am just starting my business and I am making cakes to get some type of a portfolio. I have had some doubts about what to do about certain things.
1. How much of a difference does it make if I use sugar paste flowers or fake flowers in photos. Would I be more of a professional if I were to make everything? Does that really matter to people(non cake decorators)?
2. After making so many cakes I finally got cake boards. I got some square ones and the corners are really sharp and when I do square cakes my corners aren't as sharp, would you consider that deceiving?
3. I have been doing some cakes out of a cake magazine, although I changed a few things would it still be considered my cake or a copy of someone elses?
4. Since I am in the begining stage would it be deceiving to represent myself as a professional? I don't know if there are degrees of professional cake decorators but sometimes I get nervous when people ask me how long I have been decorating. Since it's only been a few months I don't want to scare people away.

I only have an opinion on your first one. I think it's really what look you or the person ordering the cake is going for and their price range. I unfortunately haven't been able to learn to make gumpaste flowers yet as I haven't been doing this very long either. There are companies that you can order the flowers from already made and color them yourself. You can also use fresh(know which ones you can use) or silk really depending on the budget.

ON the last one, I am a beginner also and people ask how long I have done this, I think they are amazed at what I can do with so little experience. You may find that people aren't as concerned with how long you have done it as much as they are with all that you can do so well! But I am just a beginner too!

answer: don't put anything on your cake that you cannot reproduce. If you use silk flowers then promote the cake as such. If you buy your gumpaste flowers, you don't really need to tell people you didn't make them

Answer: no, that's fine, a lot of us do not do sharp corners especially fondant cakes.

answer: I would put the picture in my portfolio, but to give credit where credit was due I'd also cut out the picture of the cake I was making a copy of and then put...."MY VERSION OF SO AND SO'S CAKE FROM WHATEVER MAGAZINE."
That also showcases your skill and versatility. and there is nothing wrong with being inspired by a great design.

answer: If you are getting paid, then you are a professional.
