Are you using a box mix? Sometimes Pillsbury and Betty Crocker already have pudding in the mix.

I use Duncan Hines box mixes for my cakes and my standard procedure is to do this:

Box mix
1 extra egg (usually total of 4)
standard oil or butter as called for on box
substitute milk instead of water
one small box of instant pudding mix (the 4 servings size)

Turns out great - moist but not too dense.

Hope that helps!
