making cakes for occasions is definitley a lot of work and time! to make it a alot easier on you i would start preparing 1-2 weeks in advance. bake the cakes and freeze them. or bake them then crumb coat them, keeps them fresh longer. make your decorations, if not need to make right on cake, then do your filling, and icing a couple days b4. that way on the day you just have assembly. hope the helps, prob nothing you already knew.

There are a lot of Barbie cakes in the galleries....you could do the doll cake that you bake in the wonder mold or pyrex bowl, or Wilton has a Barbie character pan that has step by step instructions for frosting cake.
Good luck!!

You can definitely let a cake sit frosted and decorated, even just on the counter in a cool place, for a whole day before the party. I would say get the idea for what you want to do for each cake...then bake ahead.
Say the party is Saturday:
4 Days Ahead - Tuesday: Finalize your designs and how much cake batter you will need, along with how much frosting and any special tools you will need to get - ie: cake boards, etc. and go shopping.
3 Days Ahead - Wednesday: Bake and then freeze/refrigerate (at least 3 days ahead). Make buttercream this day and either put it in the fridge or leave it on the counter overnight (just give it a good stir before you use it to crumb coat the next day).
2 days ahead - Thursday: Fill, stack and crumb coat both cakes. Put both in the fridge and let them sit for at least an hour, lightly covered with saran-wrap after the crumb coat has slightly crusted (or on the counter in a cool place, it's simply easier to work with a cake that has been in the fridge...its sturdier). Access how much buttercream you will need for doing a solid layer of bc and also decorating, allowing for any colors you have to mix. Then make the rest (if you still need more) and color what you need. Then if you are still motivated pull one out of the fridge and start the decoration process. Get a good layer of frosting on it and smooth it out to the point you are happy with and then work on some decorations.
1 day ahead - Friday: Finish (or start) decorating one cake (the more difficult one) first. Start & finish second cake. Remember, it is always easier to work with a cold cake, so if you can keep one in the fridge while you work on the other.

Depending on how much cake you need, you can just do a barbie cake for her and then an 8" for him. If you bake 2 8" and then stack and fill - you will have roughly enough for 18-20 servings. The barbie wilton mold provides roughly 12 servings. So that would obviously be enough for roughly 30 people. Some people also will put the wonder mold cake (the wilton mold for her skirt) on top of an 8" roung to make the skirt bigger/taller...generally so they can use a real barbie rather than the pick that comes with the mold. If you use a real barbie you have to add some height to the skirt or she will stick up about a couple of inches. I really good thread on that stuff is... http://forum.cakecentral.com/cake-decorating-ftopict-402743-barbie.html+doll

Let me know if you want any help on designs, or if you have any ideas that I can help you figure out the best way to do them!

Barbie - If you buy the wilton wonder mold, it should have step by step instructions of how you bake and decorate a barbie cake. I would say go through the gallery and find a few that you like. You can either pm the person that did it, or post back here with a few links and maybe we can all help you out with tips and ideas!

Good luck and please ask any more questions you have...I will try and answer them!
