Hi Everyone---
I had the problem with white spots on the icing on my first cake I took to my Wilton class. I had frosted the cake the night before and then put it in my cake carrier afterwards...When I got up the next morning, there were spots white spots all over my cake---I was so confused!

My instructor explained the problem to me---When you make icing, the temperature of the icing is higher than room temperature because of the friction involved in the mixing. If you frost or decorate with that icing right after you make it and then cover the cake, as the frosting cools it releases moisture. This moisture condenses on the lid of your cake cover and drips onto the cake, causing the white spots. After that problem, I made sure to either let the icing sit for a little while before frosting or would leave the cake uncovered for 1 to 2 hours after frosting. No more white spots!
