...Lemon Bars has me stumped. Since I am not a lemony liking mom I wouldn't know a good tasting recipe if it put a fork in my hand and laid on my plate. I welcome all recipes tried and true, weither they be scratch or a doctored box recipe. I'm putting my 7yr olds taste buds in your hands, so please help me put a smile on her lemony loving face.

Here's a recipe I've used a couple of times, they were very tasty and very "lemony". I use freshly squeezed lemon juice when I can, and occasionally I add some grated lemon zest to the bottom layer.
LEMON BARS
Bottom Layer
1/2 cup margarine, softened
1 cup flour
1/2 cup powdered sugar
Mix and press into an 8 x 8 greased pan. Bake at 350 degrees for 15 minutes. Remove and prepare next layer.
Top Layer
1 cup sugar
2 tablespoons flour
2 eggs
1/2 teaspoon baking powder
3 tablespoons lemon juice
Mix and pour over bottom layer. Bake 20 - 25 minutes longer. Sprinkle with powdered sugar.

1 cup Gold Medal® all-purpose flour
1/2 cup butter or margarine, softened
1/4 cup powdered sugar
1 cup granulated sugar
2 teaspoons grated lemon peel, if desired
2 tablespoons lemon juice
1/2 teaspoon baking powder
1/4 teaspoon salt
2 eggs
Powdered sugar
1. Heat oven to 350ºF.
2. Mix flour, butter and powdered sugar. Press in ungreased square pan, 8x8x2 or 9x9x2 inches, building up 1/2-inch edges.
3. Bake crust 20 minutes.
4. Beat granulated sugar, lemon peel, lemon juice, baking powder, salt and eggs with electric mixer on high speed about 3 minutes or until light and fluffy. Pour over hot crust.
5. Bake 25 to 30 minutes or until no indentation remains when touched lightly in center. Cool; dust with powdered sugar. Cut into about 1 1/2-inch squares.
Thanks for the recipe, It'll be nice to try this one too. My DD was mega excited to hear that I was able to get some recipes for her craving. I'm still trying to figure out where she heard about these. I know she was watching PBS before she asked me, but I don't know what program she was watching. She calls them Lemon Squares also, are they the same?

I am one for lemon bars when the mood strikes also! but I am about the only one that likes them. Jell-O used to have a box kit that was for lemon bars. I dont' know if they still do or not but boy oh boy were they good. It has been years since I made a batch from scratch and don't even remember what recipe I used.
Let us know if you try the recipes above. They will be going into my to try list (which is about as thick as two novels atm)
This is so weird-I made lemon bars this weekend for the first time in YEARS. My mom and grandmother were visiting and the pan was devoured in one night (and I doubled the recipe!!). I use a very similar recipe to the first one, but double the crust and triple the filling and put in a 9 x 13 pan. SO yummy!
I found out how my DD learned about the Lemon Bars/ Squares. When her PBS programs were over she watched an older Kim Possible show I had taped. KP's grandma made them.

I love how innocently trusting our little ones can be. She has full confidence that they will taste good. I'll let you all know how it goes as we try them out. Once again Thank you for helping me out.
