I just made my first cake balls and they are UGLY!! I've looked at some of the ones that you all have done and they look great. Mine were not smooth at all although the cake ball was before I put it in the candy melts (thinned with crisco). What did I do wrong? HELP!! I love the idea and want to be able to do them for the holidays.

did you freeze the cake balls after forming them into a ball and before dipping?? that makes a BIG difference. Otherwise, they will get crumbly.

Once you have them formed, put them on a cookie sheet and pop them in the freezer till they're good and solid. If you need/want to dip them soon, just take off the sheet and dip. I usually make mine days/weeks ahead of time, so after freezing on a cookie sheet, I transfer to a freezer bag and save until I want to dip them. It saves a lot of time that way! And dip fast...once they start to thaw, the crumbling starts, at least for me.

Good luck!

Thanks for the info. How do you get the tops to be as smooth as they look in the pictures. Mine taste great but are not so hot in the looks dept.

I freeze my cake balls first and then when I take them out of the freezer, I stick a toothpick in them. Then I drape them with chocolate...a spoon filled with chocolate in one hand and the toothpick in the other..let the excess chocolate drip back into my pan, then just sort of rub the bottom with the back of the spoon just to give it a little coating. Move on to the next one and then go back and just "twist" the toothpick and it comes right out. Dab the top with your spoon to cover the hole!
