Here's my husband being Mr. "it won't work" (though he's mighty proud of my finished products! LOL) and today when my MIL came over to go with us to our meeting, she saw the cake and said, "Melissa, you should start a cake business. You could earn a lot of money. I know, my nurse (in croatia) used to make cakes, you remember, and she made more with cakes than being a nurse."

Plus, she HATES American cakes, but she thinks mine are pretty good because they aren't spongy... they are richer, denser and more European in texture. It was this that makes her think I can get business because it looks good, but the taste FAR outstrips anything you can buy in a store.

Now, mind you, normally my MIL doesn't have anything nice to say and is extremely critical! Too funny, just when I'm thinking of doing this on the side, she tells me I "should" do it! LOL

So ironic!

How great to have some support! That's great!

I had to reply though, mostly because of your comment about her hating American cakes, and yours being more European in texture. I was told that about several of my cakes and didn't really know exactly what that meant ... posted a thread that became quite long, but I still can't nail it down exactly ... do you bake from scratch or doctor a mix?

compliments from MIL's are so shocking some time they catch us off guard. You also know that it is a very TRUE statement icon_lol.gif I bet your DH will be a lot more supportive in the "business" end of it now. Good JOB thumbs_up.gif

That is wonderful...nothing combats a difficult husband more then when the MIL is on your side! Sadly, I am not speaking from experience since he$$ would have to freeze over twice before my MIL would have said anything against her beloved son! icon_confused.gif LOL!

So good for you! icon_smile.gif

Funny you should ask how I do my cakes! LOL Well, I was going to doctor a cake mix for the first time ever. I had a yellow cake mix in the cupboard and after reading here, I had decided I would try that mix with some banana pudding mix added to it and buttermilk instead of water. Well, I was mixing it all together, got distracted adn instead of resting the hand mixer (I don't bother with the big mixer for light batters like these) properly, I hooked it slightly on the rim of the mixing bowl and the entire bowl flipped upside down onto the floor below - batter all on the floor! ugh!

It was 10:30 pm when I started this thing, so now I had to start over. Well, I didn't have another mix (as I usually only make from scratch), so I made my cake from scratch. I still added pudding and buttermilk, but just to a scratch recipe.

When I've made cake mixes, I hate them. They are crumbly and not tasty. I thought doctoring might be an easy fix as cake mixes are so much FASTER than scratch methods, but, alas, it wasn't meant to be last night.

It might be a good thing. That cake was a huge hit at the meeting. First, everyone thought Elmo was great and then, when they bit into the cake, they were amazed. I don't think people get homebaked cakes very often. Everyone is so used to mixes or store bought that they forgot how good the scratch stuff can be!

And, about my MIL, I think if she knew my DH was against the business, she would be on his side and say, "he's probably right, etc..." but DH didn't rain on my parade today so he won some bonus points! Though I did seem him cringe a bit when I told people that I was trying to start a business while we were at the meeting! LOL

P.S. European cakes (at least the ones I've baked) are less flour and more butter and eggs. If they are spongy, it's mostly egg whites and sugar and perhaps nut flour (really finely ground nuts). their cakes are pure butter and like double to triple the eggs we are used to making. Good cakes where my Dh is from are measured in tastiness by how many eggs they take. And it makes sense - eggs (and butter) were expensive, so "fancy, expensive" desserts involved eggs and sweet butter to kind of show off how you can afford expensive ingredients. Those cakes which used to be for the rich and for special occasions are everyday things now, but a hundred years ago? Still a luxury.
