So I always make Buttercream Dream. Never really had a problem with it before until now. It just won't crust! It has been sitting for about 45 min. and it isn't crusting at all. I made it the same way I always do. If I try to smooth it, it just pulls up air bubbles. It is really getting me frustrated! Why is this happening? icon_cry.gificon_cry.gif

I'm not familiar with the recipe so what is the fat/sugar ratio? How much liquid did you use? Was the cake frozen or very cold? That will slow down the crusting.

It is a cup of crisco, 2 stick of butter to 2 lbs. ps. The cake was chilled but it has always crusted by now. I even stuck the cake in the fridge thinking it might help...it didn't. I just don't know what to try next! Oh....I used about 6 tablespoons of milk.

Is it especially hot and/or humid at your place today?

It is very humid outside but I have my room air conditioned well.

The humidity may be playing a factor, even if it is cooler inside. Or it just might not like you today. Things are weird sometimes, for no discernable reason.
