When carving a cake do you freeze/refridgerate/or carve at room temp? I have a cake to do next week and I have not done a carved cake yet! icon_eek.gif

Also, they want a red velvet carved like a fish. Would that hold up enough?

Haven't done alot of carving but I always do after removing from the fridge so it is less crumbly. Sorry - can't give you a definative on second question.
