I am making a 12x18 cake due on Friday at noon...I was just trying to wrap it to stick in the fridge and it started to break all over the place...it is midnight I'm exhausted and I am now starting to bake another cake...I am hoping to still be able to use the partially destroyed cake and make it a layer cake now with the new layer...if you were doing this would you use the broken one on the top or bottom? The cake will be covered in BC.

UGH!

I try not to pick up any cake until the next day! Lets them firm up a bit!

NOT IF IT IS A STACKED CAKE! You will create bigger problems for your self- bulging, instability- the works. Unless you are talking a small piece fell of and you can put some buttercream on it and glue it back together.

I studied architecture, so I guess I go a bit over board with preventative measures, but if it is a stacked cake, remember the the bottom is your anchor.

I am assuming it is a 2 layer cake now right? Cake, frosting, cake- no real weight on it? Covered in buttercream? Broken on bottom otherwise the buttercream is going crack along the cracks with any movement. Stacked cake? Toss it out and start over! icon_smile.gif

You can do it! I had one that was a dirt bick track and it was totally covered in fondant ready for decorations and it fell off the table and the night before at 9:00 I had to start all over. IT CAN BE DONE!!

Good luck

I personally wouldn't use it but if you do bottom is best be cause the top will just seperate and you will have trouble covering it.
