I really want to try the almond sour cream cake recipe (from here on CC). I am making a three tiered cake and it will have a vanilla buttercream frosting. What filling flavor would you suggest??

I made a very nice apricot filling...it was from the Wilton site..you use dried apricots..soak them (I did Grand Marnier) and then cook them up and whiz them up..it was easy and delicious..it tasted like jam with liquor in it..

Anything berry-like would also be good..

Chocolate would also taste good I think..

Lemon curd is my fave! But there's also Kahlua Cream Cheese...and raspberry....and chocolate bavarian cream.....and strawberry....the list goes on and on.............

I've filled it with a raspberry filling, and that was fabulous. I've also filled it with chocolate buttercream, and I've done it with chocolate ganache. It's a really versatile cake--it works well with just about anything!

I have used both orange marmalade and apricot filling with this cake; both on their own, and mixed with buttercream. For the apricot, I buy canned apricots, drain and puree them. Both fruits are really "clean" tastes, if that makes any sense icon_smile.gif
I have also used Pina Colada filling, just mixed flaked coconut and well drained crushed pineapple into buttercream...so yummy!
