Has anyone a moist fruit cake recipe without cherries and peel. I have to do a wedding cake in December and that is the couples request. In the past I have left out these and added more fruit but the cake always seems to be dry. Hope someone can help Thanks.

There is a recipe in the essential guide to cake decorating that does not have cherries or peel. However it is called a Glace Fruit Cake, so I am not sure if it would be the right flavour you are looking for. I can post or pm the recipe if you want but I need to know your sizes as that is how it is broken down. HTH

Replace the cherries and peel (and I'm assuming you're talking about the mixed candied peel?) with chopped ready-to-eat dried apricots, ready-to-eat dried prunes and freshly grated lemon and orange zests. Also soak your fruits in a good amount of brandy for at least a week before you bake. I promise you a lovely moist cake if you do this - good luck!

It is only a 6" square cake but would like bigger sizes also for the future . I will pm you carabear.
