I have taken beginning, intermediate and advanced cake decorating classes at a small shop close to my house. We didn't do much fondant work, and no gumpaste at all, to my disappointment. Does anyone "out there" have any ideas on what I can do to learn to use both of these mediums? I would also like to find out the best method to become an "advanced" cake decorator like my grandmother was many years ago. She actually took classes from Mr. Wilton himself, and was the best decorator I have ever known. She even owned a cake decorating shop in Norwalk CA at one time.

I live in Orange County in SoCal, but am not very familiar with the cake decorating shops in the area. I am more than willing to drive to L.A. or San Diego to learn as much as I can. Thank you all so much for any help you can give me.

Thank you Jan, I will read the thread, and hopefully get some ideas for future classes or videos. I made my first fondant covered cake tonight, and it made me realize how much fun it will be to use more.
