How Early To Bake...

I have to make a double layer 12x18 half sheet cake for friday...am I insane to wait until Wednesday to bake? Should I at least bake one layer tonight? icon_confused.gif

I usually bake two days out and decorate the day before. I try to make sure my cakes are as fresh as possible. I have baked a few days before when I have multiple cakes or a lot of decorating required.

I like to bake my cakes and freeze them ahead of time. I can appreciate the idea of a cake being as fresh as possible. But I figure when you buy a decorated cake from Walmart, all their cakes come in frozen, ready to decorate. And as far as I am aware, non of their customers complain the cake taste previously frozen. If I only have a single cake, with out much decorating, I will usually bake about 2 days out and do a quick crumb coat to seal in the moisture. That really works pretty well.

I have to agree with dominique26. one of the main reasons why I started making my own cakes is because I got tired of buying those pre frozen wal mart cakes. they just taste awful and the ones you get at a bakery, well the icing is usually way too sweet to eat. I like mine fresh too.

I bake and freeze also, cuts down on being so hectic. Also I notice the cake is super moist that way.
