Help With Mmf

Okay this is the second time I've tried making MMF and I can't seem to get it a nice consistency. I used directions here on CC but it seems to get too thick on me and unworkable. Any suggestions? I'm not using quite the whole two pounds of conf. sugar. I am using almond emulsion as my flavoring...is that bad? It tastes fabu but once I start kneading it, especially to color it, it gets too stiff and starts to crack. I tried microwaving it to soften but it didn't work. I did try kneading some Crisco to soften, but that didn't work either. Thanks guys!

Don't know what "almond emulsion " is. I just use extract. Maybe you added too much sugar? Did you sift it first? Makes a BIG difference for me. Also, let it rest a bit before working with it.
