I made mmf for the 2nd time and it was worse than the 1st time. what did i do wrong? 1st the mmf was sticking to my counter when trying to knead it. i kept adding alot of ps because the mmf was still really sticky and it just seems that it wasnt getting any better. i didnt want to keep adding ps because i didnt want it to get dried out. so i tried to roll it out and when i would try to wrap it around my rolling pin to get it onto the cake it would rip, so i thought it might be too thin and tried to roll it out thicker but it would stick when it went around the rolling pin and i would have to roll it all over again. how thick should it be rolled? i dont want to really thick layer of fondant because it just gets peeled off and i dont know, you tell me what you guys think. i'll attach a pic. it was a 6'' cake that i over filled ;( and then forgot to put another layer of bc over the crumbcoat before covering with mmf so you will see where the cake was filled. it was just a bad day and i was in a rush. it was only practice but when you have too little ones everything is a rush. oh i'm forgetting about the stencil that went wrong. i tried to do stencil but it didnt work out, i was using wilton bc. this is what happens when i take the easy way and use wilton bc for the dam, crumbcoat and stencil. should have made my own bc.

Did you work enough crisco into it? Even though crisco isn't part of the ingredient list, you should use enough when you're working with it that a decent amount gets worked in. When I make my mmf I would guess (I've never actually measured) that about 1/4 cup of crisco gets worked in. My counter is always sticky until I get about 3/4 of the way through and it finally starts picking up all the sticky bits.
it was about 80 degrees in my home, could it have been melting because that was how it looked. i would roll it out and when i picked it up it just would start stretching and tearing. i do use crisco on the counter and on my hands but when the mmf started to look greasy i stopped and used ps.
I mix in my PS as soon as it comes out of the microwave I add PS until it is hard to mix. Then I dump it onto my surface cover in crisco and let it cool, after it has cool I hand knead in extra PS until it is not sticky.
Letting it cool really makes a difference.Hope it helps.
